At Saluti Wine Bar in Gloucester, our wine list is always evolving. We curate a wide variety of rotating selections and offer over 50 wines by-the-glass as well as bottle options from our walk-in wine cellar.  We invite you to explore what’s new each time you visit. In the new year, we will begin our wine tasting series, where you can meet wine makers from all over the world.  We will be featuring different wine makers and we are thrilled to open with some of our favorites.

G.D. Vajra

  

The Vajra family has farmed Bricco delle Viole, the highest cru in Comune di Barolo, since the 1880s. At the young age of fifteen, Aldo Vajra embraced the dream to revive his family legacy. Displaying a vision and commitment belying his young age he took over the estate in 1968, turning a new page. Today, the Vajra family continues the vineyard research focusing on the influence of soil and climate change. The winery is trail-blazing the rediscovery of Chiaretto di Nebbiolo and the wines of the 17th century – long before Barolo was created - through two limited-production wines: "N.S. della Neve" (a champagne-method rosé brut) and "Claré J.C.", a partial whole-cluster fermentation of pure Nebbiolo.

Fattoria di Petrognano

For Pellegrini, respecting Petrognano’s identity and history means focusing not only on its local wines, namely Sangiovese, Trebbiano Toscano and Canaiolo, but also adapting the vineyard’s activities to its different microclimates. It has deep-running medium-texture soils with different exposure levels, and they are surrounded by hills with altitude ranges of 180–250 m. The biodiversity of the company’s microclimates and the varying vine ages create a rich ecosystem that makes for the wines’ stylised personalities. The company has chosen to place its faith in these three varietals because they have the ability to best express the area’s wine-making potential: Sangiovese, the symbol of Italian viticulture and the base of Tuscan reds, and Canaiolo and Trebbiano Toscano, which are inextricably linked to the region’s authenticity and flavour. So-called international varietals have been eradicated in favour of new clones and massal selections of local varietals, save for 2 hectares divided between Merlot and Syrah. This choice was a result of the unique features that these wines have produced over the years.
